Traeger Smoked Steak

Like juicy tender steak? I think everyone does, but if you are one of those rare birds that doesn’t, please keep looking. This recipe is not for you. This recipe for Traeger smoked steak keeps it simple, just showcasing the beauty of the beef itself. No marinades, just seasoning. This recipe is simple, but produces a perfectly cooked steak that is mouth watering, flavorful, and simply wonderful. While I’ve prepared a steak like this for myself more often than I’d care to admit, the results are so perfect that there’s no reason you can’t serve it to company. Beef Selection

Let’s face it, the quality of the beef matters when making a Traeger smoked steak. I generally buy Prime steak from Costco when I smoke with this method. You can certainly use Choice meat from your local grocer, but the quality of the meat will show. You can pretty much use any cut of steak you’d like. However, I prefer the New York strip because the fat content provides the right amount of flavor while still preserving the wonderful flavor and texture of the beef.

Seasoning for Traeger Smoked Steak

The seasoning matters. Please don’t spend lots of money on a nice cut of beef and then not season it well! For this steak, I am using Kosmos Cow Cover seasoning, which is a very versatile mix which doesn’t overshadow the flavor of the Traeger smoked steak. You can use almost anything that you like…simply using salt and pepper is an option, but I’d include a bit of garlic powder to bring out the best of the beef.

Traeger Pellets

You really can’t go wrong with any type of Traeger pellet for these Traeger smoked steaks. I prefer to use Traeger Gourmet Blend (only found at Costco) for steaks, which is a combination of Maple, Hickory, and Cherry hardwoods. It gives the steak a nice blend of flavor. You really can use anything from Traeger for this recipe. Don’t forget to add the pellets to your AnyList Costco List!

Smoking

Smoking a Traeger smoked steak is pretty simple overall. Just place it on the preheated grates, and let the smoker does it’s thing. I recommend utilizing a probe meat thermometer, if you have one. This allows you to bring the steaks up to the exact right temperature. You can also bring each one to a different level of doneness. This is next level smoking! If you don’t have a probe meat thermometer, check out the InkBird 5 probe option. It will allow you to cook up to 5 steaks, monitoring each one independently, and is very reasonably priced.

Equipment

  • Traeger Pellet Smoker
  • Wireless Thermometer with Stay-In Probes
  • Iron Skillet (or any other pan that can withstand high oven temps)

Ingredients
  

  • 4 Steaks New York, Tenderloin, Ribeye
  • 1/4 cup Beef Seasoning

Instructions
 

Prep

  • Preheat Smoker to 225 degrees F and load up with your preferred hardwood pellets.
  • Season Steaks with chosen seasoning.

Smoke Steaks

  • Once smoker is preheated, place steaks in smoker.
  • If available, place probes in each steak and wait approximately 45 minutes (depending upon thickness and fatness content) to come up to temperature. For medium rare, cook to 120 degrees, as the reverse sear will bring it up to a perfect 130 degrees F. For other preferences, please google beef doneness temperatures. Remember to take the steaks off the smoker at 10 degrees below your finishing temperature as we'll be reverse searing the beef. Remove each steak as it comes to temp individually. Because we are going to broil the steaks, you can let them cool, but hopefully each steak will cook in close to the same amount of time. I usually let them sit for 10 minutes prior to putting in the broiler.
  • Once the final steak is about 10 or 15 minutes from the desired temperature preheat the oven to Broil on High, and place iron skillet into oven to heat up.

Broil

  • Remove iron skillet (Careful it'll be crazy hot!!!), and place on heat safe counter or cooktop.
  • Place each steak on iron skillet and listen to the lovely sizzle.
  • Place skillet back into oven and watch for bubbling. It'll probably take just a couple of minutes.
  • Remove skillet from oven, and place on heat safe counter or cooktop, and remove steaks and place on a serving plate to avoid continued cooking.
  • Let rest for 5 minutes, then serve. Enjoy!
